Sichuanese Cuisine Restaurant, also known as “Old Szechuan Restaurant” in Chinese, was originally founded by Chef Kao Hsiao-Sung in Seattle Chinatown in 1992. He started his own restaurant in an older and kind of worn-out restaurant in Seattle Chinatown because he wanted to keep the old and authentic Sichuanese cooking style alive and that is why he gave the name of “Lao Sichuan” which means “Old Szechuan.”
